I’m not Irish (that I know of), but I definitely have some fun memories of celebrating St. Patrick’s Day growing up. Whether it be making a leprechaun trap at school or eating corned beef and cabbage at home, it’s fun to have a holiday to celebrate however you like. I’m thinking I need to try my own adaptation of Skinny Taste’s Shamrock Shake today. Anyone else with me? 🙂
Ingredients
3/4 cup milk (whatever kind you like)
3/4 cup vanilla frozen yogurt or ice cream
1 T sugar, or a few drops of Stevia
1/4 tsp. mint extract – I may just use a few drops of Peppermint extract. Be careful if you do – it’s strong!
1 cup crushed ice
Green food coloring, optional – she uses avocado, but I’m not afraid of food coloring.
Directions
Put all the ingredients into the blender. Blend for 3-4 minutes until the mixture if thick and icy. Pour into two glasses (or one big one!) and serve with a thick straw. Enjoy!
