When you start the process of moving out of the home you grew up in you kind of lose track of everything else in your life (hello, last two weeks of my life). 🙂 But today I am back and just wanted to share a few things I’ve found online in the last few weeks in between stripping wallpaper and pinning ideas for my first home.
Cheddar Jalapeño Chicken Burgers with Guacamole
I’ve never been much of a burger girl, but for some reason in the last year of my life I’ve been craving them like never before. Enter this recipe from What’s Gaby Cooking. Be still my heart. I’m a huge fan of non-beef burgers, and adding guacamole makes anything look delicious. I can’t wait to try this one out!

Spied on Pinterest. It may be the loveliest wedding cake I’ve ever seen.

Sour Cream Espresso Brownies with Salted Caramels
So many of my favorite things put together. A friend of mine shared this recipe with me, and I can’t wait to make them sometime!

Happy Monday, everyone!
I’m not Irish (that I know of), but I definitely have some fun memories of celebrating St. Patrick’s Day growing up. Whether it be making a leprechaun trap at school or eating corned beef and cabbage at home, it’s fun to have a holiday to celebrate however you like. I’m thinking I need to try my own adaptation of Skinny Taste’s Shamrock Shake today. Anyone else with me? 🙂
3/4 cup milk (whatever kind you like)
3/4 cup vanilla frozen yogurt or ice cream
1 T sugar, or a few drops of Stevia
1/4 tsp. mint extract – I may just use a few drops of Peppermint extract. Be careful if you do – it’s strong!
1 cup crushed ice
Green food coloring, optional – she uses avocado, but I’m not afraid of food coloring.
Put all the ingredients into the blender. Blend for 3-4 minutes until the mixture if thick and icy. Pour into two glasses (or one big one!) and serve with a thick straw. Enjoy!

For some reason, with St. Patrick’s Day on Monday I felt these were the perfect project to feature today. I was asked to make Hobbit cupcakes for a dear little friend’s birthday last fall. His one request was for a banana cupcake, and I thought a honey cinnamon frosting would go perfect with that for his morning birthday party. I baked them in dark green wrappers and topped them with little royal icing leaves. They were a hit, and so delicious! I’m sure Bilbo, Frodo, Sam, Merry, and Pippin would approve 🙂
