Monday Miscellany: Happy Last Day of March!

When you start the process of moving out of the home you grew up in you kind of lose track of everything else in your life (hello, last two weeks of my life). 🙂 But today I am back and just wanted to share a few things I’ve found online in the last few weeks in between stripping wallpaper and pinning ideas for my first home.

Cheddar Jalapeño Chicken Burgers with Guacamole

I’ve never been much of a burger girl, but for some reason in the last year of my life I’ve been craving them like never before.  Enter this recipe from What’s Gaby Cooking.  Be still my heart.  I’m a huge fan of non-beef burgers, and adding guacamole makes anything look delicious.  I can’t wait to try this one out!

Sour Cream Espresso Brownies with Salted Caramels

So many of my favorite things put together.  A friend of mine shared this recipe with me, and I can’t wait to make them sometime!

Macaroni and Cheese with Cauliflower

As much as I love baking, a girl cannot live by baked goods alone.  That said, I love macaroni and cheese.  It’s my absolute favorite dinner.  I found this recipe in “Real Simple” awhile ago, and had to try it.  It turned out great and is super tasty!  My brother’s friends devoured this and didn’t even realize there were veggies in with the pasta 🙂

Ingredients
16 ounces whole wheat pasta (I like to use rotini)
1 head cauliflower, roughly chopped
1-2 T olive oil
3/4 t salt
1/2 t pepper
1/2 onion, finely chopped
2 cups grated sharp Cheddar cheese (or any kind of good cheese)
1 1/2 cups sour cream (you can use reduced fat if you like)
1/2 cup milk (whatever kind you like)
1/4 cup chopped parsley (optional)
1 T Dijon mustard (optional)

Directions

Cook the pasta according to the package directions, adding the cauliflower during the last 3 minutes of cooking time.  Drain and set aside.

Set the now empty pasta pot over medium heat, and saute the onion in olive oil until soft.  

Add the pasta/cauliflower mixture, parsley, salt, and pepper; mix well.  Stir in the cheese, sour cream, milk, and mustard until combined.
