Oh my heavens is this the most deliciously simple dessert in the world. There is absolutely no excuse not to make this sometime this weekend, unless you really don’t have an hour to spare.
2 cups blueberries
2 cups raspberries (I used strawberries, so really, use whatever combo of berries available that sound great to you!)
3/4 cup all-purpose flour
2/3 cup unpacked light brown sugar
1/4 lb (1 stick) butter, melted
Preheat oven to 350 degrees F.
Place berries in a medium bowl. (If you’re using strawberries make sure to cut them up before doing this.) In another bowl, combine flour and sugar. Take 3 T of the flour mixture and mix it in with the berries. Place berries into an 8-inch square pan. (I doubled the recipe and used a 9X13–you may want to do the same because of how AMAZING this is!)
To make the topping, add the melted butter to the remaining flour mixture, mixing well. Crumble little bits of topping all over the berries.
Bake until berries just start to bubble, about 35 to 40 minutes. Cut into eight pieces, and serve warm or at room temp. This is killer with some vanilla ice cream or frozen yogurt. Mmmmm.
Enjoy this for dessert tonight, then have it for breakfast the next day–if there’s any leftover. 🙂
